Legumes are dried to improve their conservation. The paper proposes a new alternative re-hydration method for dried legumes. The use of the rapid solid liquid dynamic extraction with the Naviglio extractor technology is proposed and used. The procedure allows to fast re hydrate and aromatize dried legumes.
