The biology of freshwater crayfish as well as its farming potential has been the subject of numerous publications since the 50s and 60s of the last century. Basic biology has been extensively covered by experts and researchers from around the world and therefore will not be discussed in this chapter. References to the biology of the main critical aspects of farming, namely reproduction and feeding, will be kept at a minimum, and only those aspects, functional to the comprehension of this chapter will be reported.
