In this paper I discuss some elicitation techniques and their reliability for the study of phonetic variation in the dialects of Italy. The theoretical reflections are anchored to the analysis of an actual linguistic phenomenon: the synchronic alternation between diphthongs and monophthongs in the dialect of Pozzuoli (NA). The need for using natural conversational data is argued.
