The influence of flow on the microstructure of biphasic systems has been investigated. Both polymer and aqueous biopolymer liquid/liquid mixtures were investigated. An innovative methodology has been developed to characterise the morphology of liquid-liquid biphasic systems. Contrast-enhanced optical microscopy was used for direct observation, automated image analysis algorithms have been developed to characterize the size and shape of the inclusions. The main emphasis of the work has been on the simple shear flow, focusing on the coalescence and drop deformation phenomena in concentrated polymer blends, comparing the experimental results with theoretical models. Finally the problem of the mixing of two liquid through Kenics static mixers has also been studied.
