Italy is one of the European countries with a very distinctive food culture and with the largest amount of protected products. But still, consumers know very little about the meaning of the different symbols adopted and very often do not distinguish them from each other. For several years now, in response to the food scandals, there is an effort to change the trend towards the acceptance of the typical, seen as protection of quality products from counterfeit, fertile soil for triumph in the agrifood sector. The European law on protection of quality production is nevertheless going through a retraction crisis: scapegoats and less severe rules are nullifying artisan production in favour of the industrial one.

Abstract
