The aim of this work was to evaluate the hygienic-sanitary situation of products in some caterings in Salerno (Italy). The sampling done between October 2003 and 2004, included mixed salad, first courses, ice cream and pastry products. No pathogens detected in the foodstaff handled. In terms of total coliforms unconfirmity the products were in the following order: Mixed salads (87%)>Pastry (86%)>Ice cream (67%)>First courses(30%) while for total plate count only 28% mixed salad samples didn’t confirm the referan laws. The strategies: more detailed education of the staff and higher number of controls should be undertaken for effective food quality control.
